Cod with Basil Sauce and Roasted Tomatoes

Cod with Basil Sauce and Roasted Tomatoes

Yield: 4 servings

Ingredients:
4 (7 ounces each) cod fillets
4 large ripe tomatoes, halved
1 teaspoon coarse sea salt
4 tablespoons olive oil
3 garlic cloves, finely chopped
3-4 thyme sprigs
Salt and pepper to taste

Basil Sauce
1/4 cup fresh basil
2 tablespoons freshly grated Parmesan cheese
4 teaspoons olive oil

Directions:

  1. Preheat oven to 350F. Arrange tomatoes halves, cut side up, on a baking sheet. Sprinkle chopped garlic, coarse sea salt and thyme sprigs evenly over top. Drizzle with 2 tablespoons of the olive oil. Roast tomatoes until soft, about 40-50 minutes.

  2. Place the sauce ingredients in a blender and blend until smooth.

  3. Season cod fillets to taste with salt and pepper. Heat remaining olive oil in skillet over medium-high heat. Add cod and sauté for 4-5 minutes on each side or until fish flakes easily when tested with a fork.

  4. Arrange cod fillets and roasted tomatoes on dinner plates, spooning sauce over cod fillets, and serve.
