Cod Chowder

Ingredients:
3 slices bacon, cut in 1/2 inch pieces
2 medium onions, coarsely chopped (about 1 1/2 cup)
2-3 medium carrots, diced
2 medium cloves garlic, minced
2 cups chicken broth
2 medium potatoes, diced
2 whole bay leaves
1/4 teaspoon dried thyme
1/4 teaspoon white pepper
1 pound fresh or frozen cod, cut in 1-inch pieces
1 cup sour half and half


Directions:

  1. In large saucepan, fry bacon until crisp, remove and drain.

  2. Add onions, garlic and carrots to bacon drippings and saute until lightly browned.

  3. Add chicken broth, potatoes and spices. Cover and simmer until potatoes are nearly tender, about 15 to 20 minutes.

  4. Stir in fish and simmer for 5-7 minutes until cooked.

  5. Stir in sour half and half and heat, but don't boil.

  6. Ladle into mugs, garnish with bacon pieces.
