A variation of clam chowder recipe. This one is enriched with cheese and thyme.
Ingredients:
2 cans clams, drain and save liquid
4 carrots, diced
3 stalks celery, diced
3 cups diced potatoes
1/2 tablespoon thyme
1 bay leaf
1/2 cup butter
2/3 cup onion
4 tablespoons flour
1 tablespoon salt
4 cups milk
2 cups shredded cheese, sharp
Directions:
- Melt butter, saute onions, stir in flour until golden brown. Remove from heat and stir in clams liquid.
- Add celery, potatoes, carrots, thyme, bay leaf, salt and add just enough water to cover vegetables. Cook until vegetables are tender.
- Stir in flour, milk, cheese and clams and warm (do not boil). Remove bay leaf and serve.
