Clam Chowder Recipe

A variation of clam chowder recipe. This one is enriched with cheese and thyme.

Ingredients:
2 cans clams, drain and save liquid
4 carrots, diced
3 stalks celery, diced
3 cups diced potatoes
1/2 tablespoon thyme
1 bay leaf
1/2 cup butter
2/3 cup onion
4 tablespoons flour
1 tablespoon salt
4 cups milk
2 cups shredded cheese, sharp


Directions:

  1. Melt butter, saute onions, stir in flour until golden brown. Remove from heat and stir in clams liquid.

  2. Add celery, potatoes, carrots, thyme, bay leaf, salt and add just enough water to cover vegetables. Cook until vegetables are tender.

  3. Stir in flour, milk, cheese and clams and warm (do not boil). Remove bay leaf and serve.
