Clam Chowder Perfection Recipe

A clam chowder recipe prepared with fresh clams

Ingredients:
15-20 small clams in the shell
5 medium potatoes, diced
1 large onion, diced
2 slices bacon, diced
1/4 cup butter
1 1/2 cup milk
Water
Salt and pepper to taste


Directions:

  1. Scrub clams well, place in a pan with 1 cup of water. Cover and cook for about 5 minutes or until shells open. Strain liquid and reserve. Pull clams from shells and cut into small pieces.

  2. Put potatoes, onions and bacon in a saucepan. Nearly cover them with clam liquid and water. Cover and simmer until potatoes are tender.

  3. Meanwhile, in a large pan, melt butter over low heat. Add flour and stir until bubbly and blended. Add milk and cook, stirring constantly until thick.

  4. Add clams and potato mixture to the sauce. Then to desired consistency, with water.

  5. Taste with salt and pepper. Heat, stirring, just to the boiling point before serving.
