A clam chowder recipe prepared with fresh clams
Ingredients:
15-20 small clams in the shell
5 medium potatoes, diced
1 large onion, diced
2 slices bacon, diced
1/4 cup butter
1 1/2 cup milk
Water
Salt and pepper to taste
Directions:
- Scrub clams well, place in a pan with 1 cup of water. Cover and cook for about 5 minutes or until shells open.
Strain liquid and reserve. Pull clams from shells and cut into small pieces.
- Put potatoes, onions and bacon in a saucepan. Nearly cover them with clam liquid and water. Cover and simmer until
potatoes are tender.
- Meanwhile, in a large pan, melt butter over low heat. Add flour and stir until bubbly and blended. Add milk and cook, stirring constantly
until thick.
- Add clams and potato mixture to the sauce. Then to desired consistency, with water.
- Taste with salt and pepper. Heat, stirring, just to the boiling point before serving.
