Chinese Crab Chowder with Corn Recipe

Ingredients:
1 tablespoon oil
1 small onion, chopped
1 clove garlic, minced
1 tablespoon freshly grated ginger root
1 small chili, seeded and finely chopped
2 tablespoons dry Sherry or Chinese rice wine
8 ounces crabmeat
10 ounces whole kernel corn
2 1/2 cup chicken broth
1 tablespoon light soy sauce
2 tablespoons fresh chopped cilantro
2 eggs, lightly whisked
Salt and pepper to taste


Directions:

  1. In a large saucepan, heat oil and saute onion stirring occasionally for 5 minutes at low heat or until onions are transparent. Add garlic, ginger and chili, stirring for 1 minute.

  2. Pour in sherry or rice wine, cook over middle heat until reduced by half. Stir in crabmeat, corn, broth an soy sauce. Let cook until boil, then 5 minutes more. Stir in cilantro. Taste with salt and pepper.

  3. Remove saucepan from heat, add eggs. Wait for some seconds, then mix well. Serve immediately.
