Cajun Tuna Salad

Yield: 8 Servings

Ingredients:
1 (16 ounces) can peeled tomatoes
1/2 cup chopped onion
1/2 teaspoon celery seed
4 hard boiled eggs, chopped
2 tablespoons juice from peeled tomatoes
1 (6 1/2 ounces) can tuna, mashed
2 tablespoons dill relish

Sauce:
2 tablespoons mayonnaise
1 tablespoon Worcestershire Sauce
2 teaspoons Poupon or creole mustard
1/4 teaspoon garlic powder
1 tablespoon olive oil
Salt to taste
2 teaspoons Louisiana hot sauce
2 teaspoons wine vinegar


Directions:

  1. Prepare the sauce: Beat mayonnaise and mustard really well, adding olive oil. Add all ingredients and beat well. Reserve.

  2. Chop tomatoes. Mix onion, celery seed, eggs, juice from drained tomatoes, tuna and dill relish.

  3. Add prepared sauce. Mix well (If it is too soupy, add some crushed saltine crackers).
