Broiled Salmon Teriyaki

Broiled Salmon Teriyaki

Yield: 4 Servings

Ingredients:
1/4 cup chicken broth
1/4 cup rice wine
2 tablespoons sugar
2 tablespoons grated gingerroot
2 tablespoons low sodium soy sauce
4 (4 ounces) salmon fillets, skinned

Directions:

  1. Combine chicken broth, rice wine, sugar, gingerroot, soy sauce in a small saucepan. Bring to a boil and cook over medium high heat 5 minutes oR until slightly thickened, stirring occasionally. Strain and discard gingerroot. Let cool.

  2. Brush both sides of salmon fillets with soy sauce mixture. Place fillets on a rack coated with cooking spray. Place rack on a broiler pan.

  3. Broil 4 to 5 inches from heat 3 minutes. Turn over and baste with soy sauce mixture. Broil an additional 3 minutes or until salmon flakes easily. Baste with soy mixture and serve.
