Yield: 4 servings Ingredients: 18 ounces shrimp, deveined and peeled 2 cloves garlic, minced 1 tablespoon oil 1/2 cup salsa 1/4 cup chopped fresh cilantro 1 cup shredded cheddar cheese
Directions: - Cook shrimp and garlic in oil for about four minutes, or until justopaque.
- Stir in salsa and remove from heat. Stir in cilantro.
- Divide into four overproof bowls and sprinkle evenly with cheese.
- Place under broiler for 2-3 minutes, or until cheese is brown and bubbly.
