Broiled Mexican-Style Shrimp

Yield: 4 servings

Ingredients:
18 ounces shrimp, deveined and peeled
2 cloves garlic, minced
1 tablespoon oil
1/2 cup salsa
1/4 cup chopped fresh cilantro
1 cup shredded cheddar cheese

Directions:

  1. Cook shrimp and garlic in oil for about four minutes, or until justopaque.

  2. Stir in salsa and remove from heat. Stir in cilantro.

  3. Divide into four overproof bowls and sprinkle evenly with cheese.

  4. Place under broiler for 2-3 minutes, or until cheese is brown and bubbly.
