Brattens Famous Clam Chowder

Ingredients:
1 cup onion, finely chopped
1 cup celery, finely chopped
2 cups potato, finely diced
2 cans (13 ounces) clams and juice
3/4 cup butter
3/4 cup flour
1 quart milk
1 1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons red wine vinegar


Directions:

  1. Drain juice from clams and pour over onions, celery, and potatoes. Add enough water to barely cover. Cook vegetables.

  2. Meanwhile, melt butter, add flour and blend until smooth. Stirring constantly, add milk and cookuntil smooth and thick. Add salt and pepper.

  3. Add white sauce, clams and vinegar to vegetable mixture and heat through until thick.

  4. Serve immediately.
