Baked Sole with Shrimp

Ingredients:
1 1/2 pound sole fillets
2 cups light cream
1/2 cup sherry
Salt and pepper
1/2 cup fresh or canned shrimp, drained and cooked
1/2 cup buttered bread crumbs


Directions:

  1. Trim fillets and place in a shallow, greased, glass baking dish.

  2. Add the cream and sherry. Season with salt and pepper. Add shrimp.

  3. Bake in a hot 400 degree oven until cream and sherry have thickened and cooked down.

  4. Sprinkle with buttered bread crumbs over the surface. Place under broiler until sauce bubbles and browns in spots.

  5. Garnish with lemon slices or parsley and serve.
