| Baked Salmon with White WineThis recipe was contributed by G. Labrecque editor of Easy Comfort Foods (http://www.easycomfortfoods.com)Yield: 4-6 portions Ingredients: 1 large salmon filet (around 2 pounds) 1 cup white wine 3 tablespoons butter 1/4 cup shallot, sliced Juice of 1 lemon Salt and Pepper to taste 1 tablespoon freshly chopped dill 1 cup light cream
Directions:- Skin the salmon filet with a sharp knife.
- In a large cooking pot, cook the shallots in butter for 5 minutes.
- Add the white wine, lemon juice, salt and pepper to taste. Whisk gently tomix the ingredients.
- Lay the salmon filet in the mixture then bake covered at 350 F for 40minutes, basting often with cooking sauce.
- Bake uncovered for 10 more minutes.
- Remove salmon filet from the cooking pot and keep warm.
- Add the cream and dill to the cooking liquid, and whisk gently for 5-8minutes over medium-low heat to create your sauce. Serve with the dill sauce and eat with your favorite vegetables.
