Baked Salmon with White Wine

Yield: 4-6 portions

Ingredients:
1 large salmon filet (around 2 pounds)
1 cup white wine
3 tablespoons butter
1/4 cup shallot, sliced
Juice of 1 lemon
Salt and Pepper to taste
1 tablespoon freshly chopped dill
1 cup light cream


Directions:

  1. Skin the salmon filet with a sharp knife.

  2. In a large cooking pot, cook the shallots in butter for 5 minutes.

  3. Add the white wine, lemon juice, salt and pepper to taste. Whisk gently tomix the ingredients.

  4. Lay the salmon filet in the mixture then bake covered at 350 F for 40minutes, basting often with cooking sauce.

  5. Bake uncovered for 10 more minutes.

  6. Remove salmon filet from the cooking pot and keep warm.

  7. Add the cream and dill to the cooking liquid, and whisk gently for 5-8minutes over medium-low heat to create your sauce. Serve with the dill sauce and eat with your favorite vegetables.
