Baked Salmon with Tomatoes and Onions

Baked Salmon with Tomatoes and Onions

Yield: 4 Servings

Ingredients:
1 pound salmon fillets
1 teaspoon dried oregano
1 clove garlic, minced
Salt and pepper to taste
2 small tomatoes, thinly sliced
2 small onion, chopped into rings
2 tablespoons parsley, chopped
1/4 cup dry bread crumbs
1 tablespoon vegetable oil

Directions:

  1. Spray shallow baking pan with non-stick coating.

  2. Place fish in baking pan and sprinkle with oregano, garlic and pepper. Layer with tomatoes, onions and parsley.

  3. Mix bread crumbs with oil and sprinkle on top of fillets.

  4. Bake at 450F for 10-15 minutes or just until fish flakes easily.
