| Baked Salmon with Tomatoes and Onions
 Yield: 4 Servings Ingredients: 1 pound salmon fillets 1 teaspoon dried oregano 1 clove garlic, minced Salt and pepper to taste 2 small tomatoes, thinly sliced 2 small onion, chopped into rings 2 tablespoons parsley, chopped 1/4 cup dry bread crumbs 1 tablespoon vegetable oil
Directions: - Spray shallow baking pan with non-stick coating.
- Place fish in baking pan and sprinkle with oregano, garlic and pepper. Layer with tomatoes, onions and parsley.
- Mix bread crumbs with oil and sprinkle on top of fillets.
- Bake at 450F for 10-15 minutes or just until fish flakes easily.
