Baked Halibut In Foil

Baked Halibut In Foil

Yield: 4 Servings

Ingredients:
4 halibut fillets (6-8 ounces each)
3 tablespoons olive oil
2 tomatoes, peeled, seeded and chopped
4 tablespoons olives, sliced
2 garlic cloves, minced
3 tablespoons parsley, chopepd
Salt and fresh grated pepper to taste

Directions:

  1. Preheat oven to 400F. Grease 4 pieces of aluminum foil with olive oil (the pieces of aluminum foil should be large enough to wrap the halibut fillets in a very loose parcel).

  2. Season halibut fillets with salt and pepper to taste. Place the halibut fillets on each piece of aluminum foil.

  3. In a small bowl, mix tomatoes, olives, garlic and parsley. Season to taste with salt and pepper.

  4. Spread the tomato mixture equally over halibut fillets. Wrap loosely, making sure the edges are securely folded together so that no steam can escape. Bake for about 8-10 minutes or until fish flakes easily.
