Baked Clams
A clam recipe to be served as appetizer
Ingredients:
2 dozen clams
4 tablespoons olive oil
2 cloves garlic, minced
1 meddium onion, chopped
1 tablespoon bread crumbs
1 tablespoon parsley or chives
1/4 tablespoon oregano
Salt and pepper to taste
Grated Parmesan cheese
Lemon juice
Directions:
- Scrub clams with stiff brush under cold water until all grit is removed.
- Steam clams open in a covered pot with very little water. Remove clams from shell and chop up very fine.
- Saute onion and garlic until golden. Mix with chopped clams, bread crumbs, parsley, salt, pepper and oregano.
- Fill shells. Sprinkle with cheese and lemon juice. Dot with butter and place under hot broiler about 5 minutes.
