Baked Clams

A clam recipe to be served as appetizer

Ingredients:
2 dozen clams
4 tablespoons olive oil
2 cloves garlic, minced
1 meddium onion, chopped
1 tablespoon bread crumbs
1 tablespoon parsley or chives
1/4 tablespoon oregano
Salt and pepper to taste
Grated Parmesan cheese
Lemon juice

Directions:

  1. Scrub clams with stiff brush under cold water until all grit is removed.

  2. Steam clams open in a covered pot with very little water. Remove clams from shell and chop up very fine.

  3. Saute onion and garlic until golden. Mix with chopped clams, bread crumbs, parsley, salt, pepper and oregano.

  4. Fill shells. Sprinkle with cheese and lemon juice. Dot with butter and place under hot broiler about 5 minutes.
